Banana Cake

When bananas start to go from lovely yellows to browns I make this banana cake. You can use a 450g loaf tin for this but I really liked it turned out in this bunt tin, memories of the 80’s!

75g butter,softened

110g sugar

125g plain flour

100g wholemeal flour

2tsp baking powder

2 eggs, large

4 ripe bananas,mashed

handful of whatever you love. I kept it simple and used cranberries and walnuts. Coconut,raisins,chocolate chips,any nuts of your choice–anything really!

Icing sugar for dusting

First preheat your oven to 180 C/ 350 F.

Begin by mixing the butter and sugar together until nice and fluffy. One by one add the eggs and continue to mix. To this add the mashed bananas and sift in the dry ingredients. With a big spoon fold everything together. Add your choice of fillings and turn it into the buttered and floured tin. Bake for 50 minutes or until it is golden and just coming away from the edges.

When it has cooled dust with Icing sugar.
