Can you believe that it is that time of year again when cookies and other sweet treats will be enveloping our houses with delicious aromas of sugars and butters. When I think of Christmas baking thoughts of sugar plums and sparkly designs come to mind. I have been making these for years and when they are adorning your table they resemble little jewels of deliciousness!

425g/15oz flour
75g/3oz sugar
zest of 1 large lemon
4 egg yolks
2tsp vanilla extract
25g/11 1/2oz butter,softened
jam of your choice
icing sugar for dusting

cookie cutters.

To begin preheat your oven to 180C/350F. Sift the flour into a large bowl with the lemon zest,egg yolks,vanilla extract and butter. Combine to form a dough and cover in cling film, flatten into a disc, refigerate for half an hour or so.
Lightly flour your work surface and roll out the dough to 1/4in thickness. With the cutters,cut the dough into discs.
Taking half of the discs cut holes into the centres so that they resemble donuts. Lay them all onto a baking sheet lined with parchment paper and bake for 8-10 minutes.
Let them cool on a wire rack for a few minutes after which you can spread the jam onto the whole discs. Lightly dust the cut out discs with the icing sugar and carefully lay onto the jammed discs.
I use apricot and raspberry jam for these but you can use any flavour that you prefer of course. These are so pretty that they would be lovely to give as edible gifts.
