What’s Christmas without gingerbread? Or should I say without kids getting into the kitchen and making them, sure the place will look like a huge mess but that makes it all the more fun! Easy to make and fun to decorate.

300g butter
125g sugar
125g soft brown sugar
225g golden syrup
725g flour
2tsp baking soda
3-4 tsp ground ginger
2-3 tsp ground cinnamon

Start by adding the butter, sugars and golden syrup into a saucepan to melt. In a large bowl add all the dry ingredients and whisk to combine. Add the melted mixture carefully into the bowl and stir to form a dough. Once you have a nice dough wrap in cling film and refrigerate for about 30 minutes or so.

Preheat your oven to 180C and roll out the dough. Cut into your desired shapes and pop onto a parchment lined baking sheet, transfer to the oven to cook for 12 minutes. When done place onto a wire rack and allow to cool. Ice and decorate!

175g icing sugar
1-2 tbsp hot water
mix to combine
