Mushroom Truffle Soup

Any mushrooms can be used of course, I used cremini and portabello. Also with the addition of brown rice, just a small handful, made this into a lovely dense thick soup. Right at the end a tiny drizzle of good truffle oil makes an ordinary mushroom soup into something really special. Serve with crusty bread and enjoy!
