Halloumi and Mint Bread

An aromatic homemade bread is the best thing since— well sliced bread— with the addition of halloumi and mint it is made extra special.

What you will need
4 cups flour
1 1/2 tsp salt
2 tbsp olive oil
1 oz yeast
1 1/4 cups warm water
1 cup chopped halloumi cheese
Handful of mint

To begin, add the flour, salt, yeast and olive oil into a large bowl. Add the yeast making sure it does not touch the salt. Add the warm water stirring slowly all the while until you have a lovely soft pliable smooth dough. This will take about 10 minutes. Cover with a tea towel for 1 hour or until it has doubled in size. Punch down and knead in the halloumi and mint well.. Shape into a ball and cover one more time for approx 30 minutes. Place onto a lined baking sheet and bake for 30 minutes in a preheated 425F oven.
