I had a mission to accomplish this last week and that was trying to master making choux pastry. Now I have made it before and usually with descent results but the last while I seem to have lost it, so I persevered until it worked. Years ago it took me three times in a row to get it right!
So here is the recipe, hope it works for you!
170 ml milk
170 ml water
100 g butter
1 tsp salt/sugar
170 g flour
Icing sugar for dusting
In a saucepan add the milk, water,butter, salt and sugar. Once everything has melted down add the flour. This is where you will need some muscle because you have to stir. As soon as the dough comes away from the sides of the pan and it has all come together this part is done!
Transfer to a bowl and stir to cool it down a bit as next you will be adding the eggs and you dont want to end up with a scrambled mess. One by one add each egg stirring all the while. It will look as if it has gone very wrong but hang in there, everything will start to blend nicely and resemble a thickish cake dough. The dough should not be too thick as you will have a right old time trying to pipe it.
Now the fun begins. Using a piping tip that is about a half an inch round, pipe into a ball shape. I kept the points as I thought they looked sweet. If you prefer you can just wet you finger and dab them down to get a real ball shape. Dust with icing sugar and place in a preheated oven 180C /350F for 20 -25 minutes. Cool on a wire rack.
