This one is easy and great to just put in the middle of the table for everyone to tuck into. Using only a pan, cleaning up is a breeze! All you need is two large potatoes cubed. Saute in the pan with a little olive oil until golden. Fry up a few slices of bacon and break into the mixture. Chop a tomato into the pan. Crack two large eggs, preferably free range, onto the top and cover for about 3 minutes. Scatter a little lavender, salt and lots of freshly ground pepper. Done!
This will feed 2-3 people well.
