Smelts are a popular mediterranean fish that are usually deep-fried and topped with lemon. The secret is to make sure that your oil is very hot when you add them so that they do not absorb the oil. All you have to do is dust the fish with seasoned flour and carefully add to the hot oil for maybe 2-3 minutes and then place onto a paper towel. Squeeze some lemon over them and they are ready to eat! They are great as an appetizer or a main meal with a nice salad on the side.
