Like most households pasta is a staple in our house, so I try to change it up once in a while so that we are not eating the same old spaghetti with tomato sauce, not that there is anything wrong with that but a change is always good. Of course when it comes to pastas and their sauces the variations are endless. This one is easy and takes minutes to make.

This will feed 6.
1 pack pasta
4 slices pancetta
Handful chopped walnuts
1 cup cream
2 egg yolks
Handful of good parmesan
Lemon zest
Handful of rocket

In a large pot fill with water and add a small handful of salt. When it starts to bubble add your pasta. Meanwhile in a saucepan add a touch of oil and when hot put the pancetta in. You want to get it nice and crispy. Transfer onto a plate and add the walnuts to brown. Your pasta should be done by now. Drain but make sure to reserve half a cup of
the cooking water. In a small bowl add your egg yolks, cream and whisk to combine. Slowly stir into the pasta. Finish with the crumbled pancetta, toasted walnuts, cheese, lemon zest and rocket. Enjoy!
