This is a lovely tart to have anytime. Easy to make and full of bold flavours that work so well together.
What you will need.

1 package of puff pastry
3-4 large onions, finely sliced
Balsamic vinegar
1 cup hummus
2 roasted red peppers
Handful of black olives
1/2 cup olive oil
Feta cheese or goats cheese, for the tops.
Handful of rocket.

Put your onions into a saucepan 1 tbsp of the oil and gently saute until they are soft. Sprinkle with salt to prevent the onions from browning. Add a splash of the balsamic and reduce. This should take approx. 1/2 hour or so.

~Red pepper hummus
In a food processor add the hummus, red peppers,black olives and a little olive oil and puree until smooth.

For the tarts, cut out the squares from the pastry and line the edges on top of the squares with strips of pastry. Prick the pastry with a fork and egg wash the strips. Place into the oven for about 20 minutes at 180C/350F. Let cool and spread the puree onto the pastry. Add a tablespoon of the onion mixture and top with the cheese. Return to the oven for 10 minutes. Serve with baby rocket or a salad. Delicious!
