This cake is very luscious and full of flavour with the addition of Guinness beer. Topped with a coffee buttercream takes it to another level. Really easy to make and really yummy!

125 g butter, softened
125 ml Guinness
125 g self-raising flour
40 g cocoa powder
1 tsp baking powder
125 g sugar
75 ml milk
1 egg, beaten
1 tsp vanilla
50 g good dark chocolate.

As always begin by preheating your oven to 180C / 350F.
Melt the butter and beer in a saucepan. Sift together all the dry ingredients into a bowl. Add the wet ingredients with the chocolate, broken into pieces. Mix well and pour into a prepared loaf pan and bake for 50 minutes or until a inserted skewer comes out clean. When baked let cool.

Coffee Buttercream Icing

100 g butter, softened
200 g icing sugar, sifted
3-4 tbsp of strong coffee, cooled

Beat the butter until very soft and add the icing sugar and coffee until smooth.

Layer the buttercream over the cake and sprinkle with shaved chocolate.
