We love making home-made pasta in our house. Yes, it is not as quick as opening up a packet of store-bought, but the extra effort is so good that I think that it is worth it! For these I used up any cheese that was in the fridge and chopped up loads of parsley and sage with a grating of lemon zest. I added a little of toasted crushed almonds to the mix. The pasta is really easy to make.The rule of thumb is 100g of flour (I like using 00 flour), but any will do, to 1 egg. This will feed one person or so. For 3-4 people these are the amounts that you will need.
400g 00 flour
4-5 eggs, large
Mix the flour and salt and make a well in the centre. Add your eggs and with a fork start mixing the eggs adding a little flour as you go along. When all the flour is incorporated knead into a nice smooth ball. Wrap in cling film and refrigerate while you make the filling.
Approx. 150g ricotta cheese
Approx. 150g goats cheese
Handful grated parmesan
Handful chopped sage and parsley or any herbs that you fancy.
Zest of one lemon
Handful finely chopped almonds
