Lavender has to be one of my most favourite smells in the world! Then, infuse it into pan fried chicken and it’s just out of this world! I loved making this because it has so many yummy flavours that all work really well together to create a delicious dish. You can really make it your own by adding different ingredients that you find will work well but what we created is something you all have to try!

INGREDIENTS:

Couscous
a couple of leaves of basil
bunch of coriander, finely chopped
bunch of parsley, finely chopped
a few handfuls of spinach
Juice of 1 lemon
1-2 cloves of garlic
drizzle of olive oil
salt and pepper, to taste
1/2 cup of dried cranberries, or more depending on how you like it

Cauliflower Puree
1 head of cauliflower
milk (2%)
1 bayleaf
salt and pepper, to taste

Chicken
1-2 stems of lavender
chicken breast
salt and pepper, to taste
juice of 1 lemon
drizzle of olive oil
1-2 cloves of garlic

METHOD FOR COUSCOUS:
1. Place the couscous in a bowl, add boiling water until it is completely covered, and wait for about 10 minutes until it begins to soften and get fluffy.
2. Finely chop your coriander, parsley, garlic, basil, and spinach.
3. Add the ingredients in step 2 to your couscous along with the dried cranberries
4. Stir together and add olive oil, lemon, and salt and pepper to taste.

METHOD FOR CAULIFLOWER PUREE:
1. Chop the cauliflower and put it into a pot.
2. Add enough milk to roughly cover the cauliflower and then add 1 bayleaf.
3. Place it on your stovetop on a high heat and once it comes to a boil turn it down to a medium heat.
4. Add salt and pepper to taste.
5. Once the cauliflower is soft enough, put the mixture into a food processor (or use a hand blender) and blend it until it becomes a thick consistency.

METHOD FOR THE CHICKEN:
1. Stuff your chicken with chopped garlic and lavender.
2. Place it onto a hot frying pan with a glog of olive oil.
3. Wait for one side to get golden and crispy before turning it over onto the other side.
4. Now wait for the other side and make sure the chicken is cooked throughout before taking it off the pan.
5. Add salt, pepper, and lemon juice to taste.
6. Plate with your couscous and cauliflower puree! Enjoy!
