It seems that we are keeping with a middle eastern theme here and that’s okay because the cuisine of this region is so diverse and flavorful that I can spend months just writing about it!
Hummus is made differently in each area but this was the way that I was taught to make to it and it is wonderful in my humble opinion!

1 can of chickpeas, rinsed.
1 cup of tahini paste.
Juice of 1 lemon.
Olive oil
Seasoning

Put everything into a food processor and whizz until smooth.
