When you are stuck for breakfast and you have no idea what you fancy this one pot dish will hit the target. Its easy in that all you do is cut a potatoe or two, slice a small onion and saute until tender. Toss in a half a can of strained tomatoes and if you like a few cherry ones as well. Crack in a couple of really good fresh eggs and cover. Cook until the eggs are to your liking and season with salt and pepper. Sprinkle in some lovely oregano for a great aromatic flavour and you are done! Serve in the pan with some crunchy bread to mop up all the sauce.
